I have 2 barking tree frogs. Both are eating well and doing great. I have a male and female but neither bark. Am I doing something wrong?

Probably not. They call for mating, and defense, and sometimes when they hear music... usually the weather has to be right, or they have to hear the right frequency.

You could try getting a recording of barkers calling, and playing that on a loop. That might get em going.

I've also noticed that captive bred frogs call less often without prompting than wild caught ones.

Charlie gave correct info, I will give the biggest reasons, it is winter, it would amaze me to hear them call until mid spring.
